Chicken & Sweet Potato Stew

One pot meals are always a hit in my house, easy for me to make (and clean), my hubby loves them, and I'm sure when Luke is able to have solids he will also enjoy.  I am originally from Romania and we have many different types of one pot meals, this particular one is a stew.  I put this dish together by adding a little of my hometown roots to it, although it's not a Romanian dish, a Romanian girl made it. Here is what you will need and how to make it.



Chicken and Sweet Potato Stew

1 large onion, chopped
3 celery stalks, chopped
4 carrot sticks, chopped
2 teaspoons paprika  
4 chicken breast, cut into cubes
3 sweet potato cubed 
6 baby red potatoes cubed
3 cups chicken stock
1/3 cup cold milk
1 tablespoon flour 
1 tablespoon fresh dill
 2 tablespoon oil
Salt and freshly ground black pepper
chopped parsley for garnish

Heat the oil in a dutch oven pot, over medium heat
Add the celery, carrots, and onion. Saute the vegetables until the onion is translucent, about 5 minutes. Season with salt and pepper, to taste. Add paprika and cook for another 2 minutes. Add chicken and cook until chicken is no longer pink and cooked through. Add sweet potatoes, baby red potatoes and chicken stock. Bring to a boil on medium heat then reduce to low and simmer for 30 minutes or until potatoes are tender. In the last 5 minutes of cooking the stew, mix cold milk and flour in a small bowl and whisk in stew. Cook for 2-3 min. Season with salt and pepper, to taste.
Finish by adding the dill.

Ladle the stew into serving bowls and serve with the bread.
