Bacon & Cheddar Stuffed Zucchini

Did I have you at Bacon? I hope I did because these stuffed zucchini boats were a Huge hit in my house. They are really simple to make and most of all very delicious, not to mention the $$ for this dish is very friendly on your wallet. Oh and did I mention it's a gluten-free dish?


Bacon & Cheddar Stuffed Zucchini

3 Zucchini
1 medium onion, chopped
1 Tbsp butter or bacon fat
6 slices of crispy bacon - I bake mine on a baking pan at 350 for 10-15 min.
1 Tbsp Greek yogurt or sour cream
1 cup shredded cheddar cheese - We like a lot of cheese, you can reduce the amount if desired.
 Salt & pepper to taste 

Preheat oven to 350. Wash and pad dry zucchini, cut in half lengthwise and scoop out the middle with a small spoon, arrange in a baking dish, set aside. On medium heat in a medium size skillet, cook chopped onion, and bacon till onion is tender, remove from heat. Chop the scooped zucchini flesh and place in a bowl along with the cooked onion & bacon mixture, Greek yogurt and cheese. Salt and pepper to taste. Fill the Zucchini shells with the mixture. Bake uncovered for 30 minutes.

Are you a vegetarian? Substitute the bacon with portobello mushrooms

  5. Do you have to pre-cook the zuccinni to soften if first or just use it raw?
